SWEET POTATO BROWNIES


Yes you read it right, we used sweet potato and brownie in the same headline. These brownies are actually made on sweet potatoes and quinoa flour, which makes them gluten free and much more nutritious than your ordinary brownies. Pretty cool, right?
If you follow a lot of food blogs this combination might not come as a total surprise to you, there are a couple of different sweet potato brownie recipes out there and you might come across a couple of desserts based on sweet potatoes. But you still have to admit that it is pretty mind blowing that you can use one of the most nutritious food ingredient in one of the least nutritious cakes.
And how is the result, how potato-ish do they get? The truth is that you can't really taste the sweet potatoes and I used quite a lot of sweet potatoes in this recipe. They do however taste different to an ordinary brownie recipe. The sweet potatoes makes them a little bit more gooey, and dense and they have a very rich taste, which basically means that you can't eat all of them at the same time, but that's only a good thing, right? The dates make them sweet, and give them a little bit of a fudge like texture. In all other aspects they are similar, and depending on how much sweet potatoes you use, you will get a variation in taste. Although this recipe is free of refined sugar, they contain a lot of natural sugar from the dates. They are an awesome treat for your cheat days but I wouldn't recommend the brownies as a snack on a regular basis.

SWEET POTATO BROWNIES

INGREDIENTS
2 medium sweet potatoes (about 500g-550g)
2/3 cup almond meal
1/2 cup glutenfree flour (e.g. buckwheat, quinoa, brown rice flour)
10 medjool dates
4 tablespoons raw cacao
Pinch of salt
METHOD
1. Peel sweet potatoes, cut them into chunks and place into steamer for about 20 minutes, until they are soft.
2. Preheat oven to 180°C/356°F.
3. Add sweet potatoes to a food processor with the pitted dates.
4. Add remaining ingredients into a bowl. Stir well.
5. Place into a lined baking dish and cook for 20-30minutes (depending on how thick the brownies are).  Remove the tray and allow to cool for about 15 minutes. Enjoy!
